In Japanese - Genki , pronounced with a hard "g" means good. So, Genki Sushi means good sushi.
Sometimes when things just don't seem right...or are slightly off, I've heard the word "jenki" used as slang. So, when I first saw the sign for Genki Sushi, in my head I thought...oh no, Jenki Sushi...that can't be good. =) Slightly off Sushi...not too appealing to the tummy.
