I know it may be a few day's late, but here's my menu plan and schedule for the Thanksgiving Weekend Holiday Feasting!
Thanksgiving 2012 – Menu and Plan
Prep for ThanksgivingHomemade Turkey Stock – reduce and make concentrated liquid gold for sauce x 2 and gravy for turkey pot pie
Thanksgiving 2012 – Thursday
- Turkey - dry brined, herb butter basted, bacon wrapped
- Twice Baked Potatoes - sour cream, cheddar and chives
- Brussel Sprouts - sautéed with bacon and shallots
- Pumpkin Pie
Turkey Pot Pie - Friday
1. Make liquid gel/sauce
2. Chop turkey
3. Sautee leeks
4. Sautee pancetta and mushrooms
5. Assemble
6. Bake
Thanksgiving 2.2012 – Sunday
Given my project planning background and OCD nature - of course I also have a schedule planned, along with the times to go along with it. I also have all the recipes that I'm using or referring to in the same document. =) It's seriously a little crazy, I recognize this...but it makes me feel so much more prepared and ahead of the game for the day of.
- Turkey – done two ways, Breasts – brined and deep fried; Legs – confit in duck fat
- Green Bean Casserole
- Kitchen Sink Stuffing
- Sugar Biscuit Topped Apple Cobbler
