Personal Victory

Today I butchered 3 lamb saddles (6 cuts of lamb) within roughly 20 min each. When I first started, it took me almost an hour for a single saddle!

The best part is that my chef & sous chef complimented me. Not only did I pass the test, but I was also told that I was better than my chef in taking the meat off the bone. My sous chef said that he couldn't believe how clean the bones were!

All in all a good day for me at the restaurant. FINALLY!! Now I just have to keep it up!
