Last night I played with one of my favorite comfort foods - meatloaf.
I added chopped portobello mushrooms, onion soup mix, a few chopped tomatoes from a friend's garden, a handful of quinoa and a mixture of bread crumbs soaked in milk with a raw egg. I topped it with my favorite sauce of cream of mushroom soup with tomato purée.
I enjoyed it - we'll see how Timoz rates it tonite for his dinner (meatloaf sandwich).
Notes for future preparation:
- soak the quinoa for about 10 minutes before adding it to the mix
- keep the bread crumb mixture
- use fresh sautéed onions and sauté the mushrooms (duxelles)
How could I have fancied this up?
- Add crumbled dried porcini to the mix.
- Skip the instant onion soup mix
- Make my own cream of mushroom sauce with freshly reduced tomato
How do you make your favorite meatloaf?
Mario Batali mixes it with sausage and rolls it like a jelly roll with cheese and blanched carrots and green onions.
