Sustainability

Just started a course on Sustainability this week - it's a free course offered by the University of Illinois at Urbana-Champaign via Coursera

I am taking this course to have a better understanding of what "sustainability" and "sustainable" mean. I recently returned to corporate tech after a 5 year sabbatical where I cooked professionally (fine dining for 4 years and another year as a culinary instructor at a retail store).  In California, you hear a lot of restaurants talk about local, organic and sustainable cuisine.  I'd like to get a better understanding of what that truly means.
